By product design, it is not possible to adjust the workflow version that a task uses since it will be using the version at the time of the task's creation.
To update tasks to the latest version, use "Stop Workflow" from Monitored Tasks, then re-trigger the workflow for these documents.
If your workflow is triggered by conditions such as new documents or forms being submitted, it is best practice to create a duplicate of the workflow, then set a trigger based on index field changes, which would allow you to trigger the tasks manually.
