Answer:
To increase or decrease the amount of indexed pages by Fulltext Server, open the configuration page "File Cabinets" within DocuWare Configuration and edit the file cabinet. In General tab expand "More Options" and click on "Configure full-text search" below "Full-text Options".
Now a widget with title "Change properties of the full-text search" will appear. Use the "Indexed pages per file"-up/down menu to alter the amount of pages, that will be indexed by Fulltext Server.
Click on OK and save file cabinet settings.
In versions before DocuWare 6.12, this setting can be changed, as described in this article: KBA-35674
