If you click the [PO Number] section of the Designer tab screen, it will open another config window. This is where you can determine if a user input has been configured or not. If configured, then it will show up as a choice on the indexing tab screen.
If you try to click on the [PO Number] and it does not open, it is possible that that was typed in on one stamp making it just text and configured as a user input on the other.

Clarification. It does not remove them from DocuWare, it removes them from all groups in DW.
-
My experience is no way to do this. When you remove them from all sync'd AD groups it removes them from DW. If the user is disabled or deleted from AD, DW is supposed to disable the user in DW.

I went thru the same issue you are having. It turns out that the data is all held in blobs in one of the new cabinet tables. Therefore it is not directly accessible any more.
The API is the only way to access the data.

I believe if you go to Configurations, Organization Settings, there is a time zone and work hours that can be set.
-
I am under the impression that it should be like it was in 6.x where you select the Document Name in the Field set up of the cabinet. I tried this and several other work arounds and none of them work.

This seems to be a bug unless I am missing something.
I have marked the Field in the Cab to be the filename and it ignores it. Seems to always use the data stored in the Database called DWNAME for that info at the top of the screen and when downloading.
It use to work in 6.12 and before.

Depending on the version of DocuWare, I use to add a field like WFStep to the cabinet and set my trigger to this field being empty and whatever else you are using.
Then as a very first step in the workflow, write back to the index field WFStep and change it to something else, in my case I wouls use A (for step A) and that will keep it from triggering again.

LDAP works fully for On-Premise. Sync's users pulls there network ID and allows for "Windows Account" login.
LDAP can be used to sync users to the cloud if you use the User Synchronization Desktop app. However, with this method you will not be able to use Windows Account login since it is not available in the same form in the cloud at all v7.2 and prior.
Starting in v7.3, Azure AD is available to use with the cloud to connect on site ad with cloud DocuWare Accounts.
Attached is the basic guide to get that done. It is different than the On-Prem....

IE is very stubborn. Using Edge or Chrome will work way better and you will find that load times for everything have a marked improvement.
