I noticed that some files in the cabinet have xml files that show the database information but some files just have a dwx file along with it. Did not having the xml change and if so, what version? How does the dwx work? How do I find the information that the xml would normally have?

The dwx file replaces the XML file from DocuWare 7 onward. You can inspect the structure of the dwx file. First of all copy the file from the storage location. You should not under any circumstances attempt to open a dwx file "in situ".
The dwx file is a zip file so you can extract the components with file explorer.
The metadata XML's are found in the folder structure "Document_nn \ Version_nn".
