You can make this customization by using the following path: "C:\Program Files (x86)\DocuWare\Background Process Service\C2Mail.config"
Here you can find <add key="C2MailCheckIntervalInSeconds" value="120"/> where you can adjust the interval.
*Note: The interval should not be less than 30 seconds.
